Breakfast Today :)

Blueberry Muffins! YUMMY!!!!


Ingredients:

Servings:

Directions:

Prep Time: 15 mins
Total Time: 50 mins
  1. 1 Preheat oven to 350°F.
  2. 2 Line muffin cups with paper liners or spray with nonstick spray.
  3. 3 Mix all ingredients together until moistened.
  4. 4 Divide batter evenly among the muffin cups. Each should be filled 3/4 full.
  5. 5 Bake 35 minutes or until the tops are firm.
  6. 6 Cool on a wire rack.


I ended up doubling this recipe but ended up with 36 muffins lol!! My muffins must have been a bit smaller then what the recipe calls for :) But 36 with my crew works!!

French Toast Casserole.

This is one of the recipes (or a combo of a few) I saw online but made it out of what we had on hand :)

2 Packages of Cream Cheese
1/3 Cup of Maple Syrup
1/3 Cup of Almond Milk
1 T of Cinnamon
3 Eggs
10 Pieces of Wheat Bread

I greased my Rectangular Baker. And broke up the bread into "bite" size pieces and topped with all the other ingredients that had been mixing in the Kitchen Aid Mixer....which by the way I am in love with :)

350* for 30 minutes!

Blueberry Snack Cake!


Blueberry Snack Cake

2 c. flour
1 1/2 c. sugar
1/2 c. cold butter
1 tsp. baking powder
1 c. milk
2 egg yolks
2 egg whites
2 c. blueberries

In a mixing bowl, combine flour and sugar. Cut in butter with a fork or pastry blender until crumbly. Set aside 3/4 c. for topping. Add baking powder, milk, egg yolks. Mix well. Beat egg whites til soft peaks form. Fold into batter. Pour into a greased 9x13 baking dish. Sprinkle with blueberries and reserved crumb mixture. Bake at 350 for 30-35 min or until golden brown and toothpick comes out clean. Enjoy with a cold glass of milk!

Baked Oatmeal!

BAKED OATMEAL

1/2 c. butter or margarine
1 c. brown sugar
2 eggs, beaten
1/2 tsp. salt
2 tsp. baking powder
1 c. milk
3 c. oatmeal - quick or regular

You can add 1 tsp. cinnamon, nutmeg, and/or vanilla. I put in 1 tsp. of apple pie spice. You can also add a handful of raisins or Craisins.

Combine in order given. Bake 350 degrees, 8"x8" greased pan, 45 minutes. I bake mine in a glass pan. I let the bottom get golden brown and let the oatmeal get brown around the edges, too. Makes it a little chewy...like an oatmeal cookie!

You can add milk to it, if you want. You can also top it with fresh fruit, nuts, and/or yogurt. You'll want more than one bowl of it, I guarantee!

Yummy Cinnamon Goodness!!!

So I decided to broaden my cooking horizon and take the tradition of cinnamon rolls for Christmas breakfast and try them from scratch!! WOWZERS a lot of work but also a LOT of goodness too ;)

Cinnabon Cinnamon Rolls

1/2 c warm water
2 pkgs dry yeast
2 T Sugar
1 (3.5 oz) of instant vanilla pudding. I didn't use this I just put vanilla extract in it :)
2 c milk
1 1/2 cup butter
2 eggs
1 t salt
6 cups flour
3 c brown sugar
4 t cinnamon

The Frosting:
1 package cream cheese
1 t vanilla
3 c confectioner's sugar
1 T milk

In a bowl combine water, yeast and sugar. Stir until dissolved. Set aside.

In a large bowl, prepare pudding (or just vanilla extract) with 2 c of milk. Melt 1/2 the butter and add to pudding mixture. Blend. Add eggs. Blend.

Gradually add flour; knead until smooth. Place in a greased bowl.
Cover and let rise doubling in size. (about an hour here)
Punch down and let rise again.

Then roll out on floured surface into 34x21 in rectangle.
Spread one cup of softened butter over surface.
In a bowl, mix brown sugar and cinnamon.
Sprinkle over top.

Roll dough very tightly.
With a knife, notch every 2 inches.
Cut with knife.

Place on a lightly greased cookie sheet 2 inches apart.
With hand, press down lightly on each roll.
Cover and let rise until doubled again.

Bake 350* for 15-20 minutes.

Remove when rolls start to turn golden brown.

For frosting, blend all ingredients until smooth. Frost warm rolls.

Makes about 20 very large rolls :) Although I made about 40 small rolls!

Crepes

Crepes
Prep Time: 10 minutes | Cook Time: 10 minutes | Makes: About 6 crepes

INGREDIENTS:
1 cup milk
1/2 cup water
2 eggs
1 egg yolk
1 Tbsp. sugar
1/4 tsp. salt
1 cup all-purpose flour
1/4 cup (1/2 stick) butter, melted
Melted butter for brushing pan

HERE'S HOW:
1. Whisk milk, water, eggs, egg yolk, sugar and salt in medium bowl just until combined. Whisk in flour until smooth. Gently Whisk in 1/4 cup melted butter.
2. Brush 10-inch nonstick skillet lightly with melted butter; heat over medium-high heat until hot.
3. Lift skillet from heat and quickly pour in 1/3 cup crêpe batter, tilting and swirling pan to cover bottom evenly. Return pan to heat. Cook until bottom is light brown, about 60 seconds.
4. Carefully turn crêpe over in pan. Cook second side until light brown, about 30 seconds. Repeat to cook remaining batter, stacking crêpes on a plate with a piece of waxed paper between them.

ENJOY:
Top crêpes with spreadable fruit, such as apricot or raspberry, fold into quarters, sprinkle with powdered sugar and serve warm.

Try other kid-friendly fillings, such as peanut butter and jelly, Nutella®, sliced strawberries and yogurt, bananas and cinnamon sugar, or warmed applesauce.

Amy's Blueberry Scones!


5 cups flour
3/4 cup sugar
2 tsps baking powder
1 tsp baking soda
2 sticks of butter
2 to 2 1/2 cups half and half
1 container blueberries

In large mixing bowl combine flour, sugar, baking powder, and baking soda.  Cut in butter with a pastry blender.  Gently mix in half and half, just till mixed.  Fold in berries.

On a lightly floured surface, pat dough into a 2 inch thick rectangle.  Cut into 16-20 squares.  Place on cookie sheet keeping 2 inches apart as they will spread.  Bake 10-15 minutes in a preheated 400 degree oven.

Blueberry Muffins!!

Very Simple Blueberry Muffins

Ingredients:

1 1/2 cups flour (unbleached)
1/2 cup sugar
1 teaspoon salt
2 teaspoons baking powder (used aluminum free)
3/4 cup soy milk (used our Almond Milk)
1/4 cup oil (Olive Oil)
1 cup frozen blueberries (fresh blueberries)

Directions:

Preheat oven to 400F. Place baking cups in a muffin pan.

Combine flour, sugar, salt, and baking powder together in a mixing bowl. Add soy milk and oil. Mix.

Fold in blueberries.

Pour into baking cups and bake for 25-30 minutes.

Makes: about 8 muffins, Preparation time: 5 minutes, Cooking time: 30 minutes

Muffins!

These muffins sent my 5 yr old singing and dancing, "I love love love muffins muffins muffins"

We didn't have 3 bananas so I used 2 bananas and 2 small apples!!!!

Mmmmmm!!!!

Ingredients

TOPPING

  • 1/3 cup packed brown sugar
  • 1 tablespoon flour
  • 1/8 teaspoon cinnamon, to taste (organic)
  • 1 tablespoon cold butter
  • 1/4 cup chopped nuts (optional).....didn't use these!

Directions

  1. 1
    In lg bowl, mix the 1st 4 ingredients.
  2. 2
    Mix bananas, sugar, egg and butter.
  3. 3
    Stir into dry mixture just until moistened.
  4. 4
    Fill muffin cups 3/4 full.
  5. 5
    Combine first 3 topping ingredients.
  6. 6
    Cut in butter until crumbly.
  7. 7
    Sprinkle over muffins.
  8. 8
    Bake at 375° for about 20 minutes, until muffins test done.

    Cool in pan for 10 minutes.
