BAKED OATMEAL
1/2 c. butter or margarine
1 c. brown sugar
2 eggs, beaten
1/2 tsp. salt
2 tsp. baking powder
1 c. milk
3 c. oatmeal - quick or regular
You can add 1 tsp. cinnamon, nutmeg, and/or vanilla. I put in 1 tsp. of apple pie spice. You can also add a handful of raisins or Craisins.
Combine in order given. Bake 350 degrees, 8"x8" greased pan, 45 minutes. I bake mine in a glass pan. I let the bottom get golden brown and let the oatmeal get brown around the edges, too. Makes it a little chewy...like an oatmeal cookie!
You can add milk to it, if you want. You can also top it with fresh fruit, nuts, and/or yogurt. You'll want more than one bowl of it, I guarantee!
